Pasta Fazool


This soup is really great in the winter.
Brown a large package of hamburger and 2 chopped up onions in a dutch oven.
Sprinkle in a tablespoon of flour and stir.
Next, pour in 2 large cans of beef broth.
Add 2 tablespoons of roasted garlic, a cup of corn, a cup of peas, a cup of green beans,
a cup of shredded carrots, and a small can of tomato paste.
If you want to spice it up a bit, add a tablespoon of my Asian hot sauce.
Cook for about 4 hours on low heat.
When serving, add some cooked Ditalini pasta and grated parmesan cheese.
(Don't add the pasta while the soup is cooking, because it will absorb the liquid
and expand the pasta to an enourmous size.)

Tortilla Soup


In a pot, add the following:
1 48 oz can of chicken broth,
1 jar of salsa,
2 cut up raw chicken breasts and
2 torn up flour tortillas.
Cook for 1 hour on medium heat.
Serve with shredded Mexican cheese, tortilla chips and avacado.

Turkey Soup


This is a great way to use up your Thanksgiving leftovers.
Pour a large can of chicken broth into a saucepan. Add:
cut up turkey pieces,
1 chopped up onion,
4 tablespoons of roasted garlic,
1 chicken boullion cube,
1 cup of peas and
1 cup of cut carrots.
Cook on low for several hours.
Serve with cooked rice and grated parmesan cheese.
(Don't add the rice while the soup is cooking because it will absorb all the broth.)

Taco Soup


Brown 1 pound of hamburger in a pot and drain the grease.
Add to the pot:
1 package of taco seasoning,
1 package of ranch dressing mix,
1 can of cream of chicken soup,
1 can of corn,
1 can of cream corn,
1 can of rotel tomatoes,
1 half can of black beans,
1 half can of light red kidney beans (ranch style with jalapenos),
1 cup of chopped jalapenos.
Simmer covered for 1 hour.
Serve with Mexican cheese and multigrain Tostidos.

Beef Stew


In a Dutch oven, brown a package of beef stew meat in some oil, then add:
2 large cans of beef broth,
2 tablepoons of roasted garlic,
1 can of tomato paste,
1 can of corn,
1 can of peas,
1 can of green beans,
2 or 3 chopped and peeled potatoes
2 chopped carrots and
1 small chopped onion.
Simmer for 3 hours.

EZ Broccoli Cheddar Soup


Use Campbell's Broccoli Cheddar Soup and add a cup of chopped broccoli.
Serve with a handful of crisp bacon bits and some cheddar cheese.
